    EASTER BAKING

Looking to do something fun in the kitchen with the kids over Easter, or just fancy baking up some Easter treats... here's our super simple classic biscuit recipe, why not give it a go!

*For an all out Easter look, use our 'egg' embossed wooden Rolling pin to imprint your biscuits, and our Easter cookie cutters to create cute Easter shapes.

    MAKES... 20 - 30 biscuits

    COOKING TIME: 14minutes

    PREP TIME... 10minutes (plus chilling)

    INGREDIENTS:

    200 grams Unsalted Butter (softened)

    200 grams White castor sugar

    1 Medium egg (lightly beaten)

    400 grams Plain flour

(you will also need greaseproof baking paper)

    METHOD...

    STEP 1.

In a large mixing bowl, mix together the butter and the sugar using an electric whisk to ensure they're well mixed and just creamy in texture.

(It's important here not to overwork, or the biscuits will spread during baking).

We cut the butter into small squares to make mixing a little easier!

It should look creamy like this when mixed...

    STEP 2.

Beat in the egg until well combined. Then add the flour and mix on a low speed until a dough forms.

Now gather the dough into a ball, wrap in cling film and chill for at least 1 hour.

    STEP 3.

Preheat the oven to 190*C (fan) or 170*C gas 5.

Place the dough onto a lightly floured surface and knead briefly, then roll out evenly to 3mm thickness (making sure your biscuits are all the same thickness will ensure they cook evenly).

**If you're using our embossed rolling pin, roll the dough out using a plain rolling pin first and then use the embossed pin to imprint the design**

Then either cut by hand, or with our Easter shaped cookie cutters to your desired shape.

Next, use a palette knife to transfer the biscuits to a baking tray (lined with baking paper).

    STEP 4.

Bake for 12-14 minutes, depending on the size of your biscuits (or until golden brown at the edges).

Remove from the oven and transfer to a wire rack to cool.

Once cooled - either serve as they are...

or for a special finish, hand over to the kids to decorate!

Finally, sit down with a nice cup of tea (or if you're like me make that a Latte) and Enjoy your freshly baked biscuits!!

Happy Easter folks - and happy baking!

    xXx
